Ingredients

  • 2 cups flattened rice (poha)
  • 2 tbsp vegetable oil
  • 1 tsp mustard seeds
  • 10 curry leaves
  • 1 green chili, chopped
  • 1 medium onion, sliced
  • 1/2 cup fresh green peas
  • 1/2 tsp turmeric powder
  • 1 tsp sugar
  • to taste salt
  • 2 tbsp fresh coriander, chopped
  • 2 tbsp roasted peanuts
  • 1 lemon, juiced

Instructions

    Rinse poha gently in water and drain immediately. Set aside for 5 minutes to soften.

    Heat oil in a pan, add mustard seeds and let them splutter. Add curry leaves and green chili.

    Add sliced onions and sauté until translucent. Add green peas and cook for 2 minutes.

    Add turmeric, salt, and sugar. Mix well.

    Add the softened poha and gently fold everything together. Cook for 2-3 minutes.

    Garnish with roasted peanuts, fresh coriander, and a squeeze of lemon juice. Serve warm.
