Ingredients
- 2 cups flattened rice (poha)
- 2 tbsp vegetable oil
- 1 tsp mustard seeds
- 10 curry leaves
- 1 green chili, chopped
- 1 medium onion, sliced
- 1/2 cup fresh green peas
- 1/2 tsp turmeric powder
- 1 tsp sugar
- to taste salt
- 2 tbsp fresh coriander, chopped
- 2 tbsp roasted peanuts
- 1 lemon, juiced
Instructions

1Rinse poha gently in water and drain immediately. Set aside for 5 minutes to soften.

2Heat oil in a pan, add mustard seeds and let them splutter. Add curry leaves and green chili.

3Add sliced onions and sauté until translucent. Add green peas and cook for 2 minutes.

4Add turmeric, salt, and sugar. Mix well.

5Add the softened poha and gently fold everything together. Cook for 2-3 minutes.

6Garnish with roasted peanuts, fresh coriander, and a squeeze of lemon juice. Serve warm.
