Salade Niçoise

Ingredients

  • 200g fresh tuna steak
  • 4 eggs
  • 150g green beans
  • 1 butter lettuce head
  • 200g cherry tomatoes
  • 100g Niçoise olives
  • 4 anchovy fillets
  • 1 small red onion
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • to taste salt and pepper

Instructions

    Boil eggs for 7 minutes, then cool in ice water and peel. Blanch green beans for 3 minutes until crisp-tender.

    Whisk together olive oil, vinegar, mustard, salt and pepper to make the dressing.

    Sear tuna in a hot pan for 1-2 minutes per side, keeping it pink inside. Let rest, then slice.

    Arrange lettuce on plates. Top with halved eggs, green beans, tomatoes, olives, sliced onion, and anchovies.

    Place sliced tuna on top and drizzle generously with dressing.
