Ingredients

  • 400g cooked shredded chicken breast
  • 200g hearts of palm, sliced
  • 1 cup sweet corn kernels
  • 1 green apple, diced
  • 1/2 cup golden raisins
  • 1/2 cup light mayonnaise
  • 2 tbsp plain yogurt
  • 1/2 cup shoestring potatoes
  • to taste salt and white pepper
  • 1 tbsp fresh parsley, chopped

Instructions

    In a large bowl, combine the shredded chicken, hearts of palm, corn, diced apple, and raisins.

    In a small bowl, mix the mayonnaise with yogurt until smooth.

    Pour the dressing over the chicken mixture and toss gently to combine.

    Season with salt and white pepper to taste.

    Refrigerate for 15 minutes to let flavors meld.

    Just before serving, top with shoestring potatoes and fresh parsley.
