Ingredients

  • 4 large eggs
  • 100g smoked salmon slices
  • 2 English muffins
  • 50g butter
  • 60ml fresh cream
  • to taste sea salt and cracked black pepper
  • 1 tbsp fresh chives, chopped
  • 1 lemon, for garnish

Instructions

    Split and toast the English muffins until golden brown, then butter generously.

    Whisk eggs with cream, salt, and pepper in a bowl.

    Melt butter in a non-stick pan over medium heat.

    Pour in egg mixture and stir gently and continuously for 3-4 minutes until soft and creamy curds form.

    Arrange toasted muffins on plates and layer with smoked salmon.

    Spoon creamy scrambled eggs onto the salmon and muffins.

    Garnish with fresh chives and a squeeze of lemon juice.
