Som Tam (Green Papaya Salad)

Ingredients

  • 2 medium green papayas, peeled and shredded
  • 3 Thai bird's eye chilies
  • 3 cloves garlic
  • 2 tablespoons fish sauce
  • 3 tablespoons fresh lime juice
  • 2 tablespoons palm sugar
  • 1 cup cherry tomatoes, halved
  • ½ cup long beans, cut into 2-inch pieces
  • 3 tablespoons roasted peanuts, crushed
  • 2 tablespoons dried shrimp
  • to taste salt and pepper

Instructions

    In a large mortar, gently bruise the garlic and chilies together without completely crushing them.

    Add the palm sugar and lightly muddle until partially dissolved.

    Add the long beans and cherry tomatoes, gently tossing and pressing to release flavors.

    Add the shredded green papaya and dried shrimp, tossing gently.

    Pour in the fish sauce and lime juice, mixing thoroughly.

    Transfer to a serving plate and top with crushed roasted peanuts.

    Serve immediately while crisp and fresh.
