Som Tam (Thai Green Papaya Salad)

Ingredients

  • 2 cups green papaya, julienned
  • 8 cherry tomatoes, halved
  • 1/2 cup green beans, cut into 1-inch pieces
  • 2 garlic cloves
  • 2 Thai chilies
  • 2 tbsp palm sugar
  • 3 tbsp lime juice
  • 2 tbsp fish sauce
  • 2 tbsp dried shrimp
  • 2 tbsp crushed peanuts

Instructions

    In a large mortar and pestle, pound garlic and chilies until crushed.

    Add palm sugar and continue pounding until dissolved.

    Add green beans and tomatoes, lightly bruising them.

    Add shredded papaya and pound gently to mix.

    Season with fish sauce and lime juice, then add dried shrimp.

    Toss everything together and garnish with crushed peanuts before serving.
