Spring Chicken Salad Sandwich

Ingredients

  • 2 cups cooked chicken breast, diced
  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 cup celery, finely diced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons chives, chopped
  • 4 slices sourdough bread
  • 1 cup mixed spring greens
  • to taste salt and pepper

Instructions

    In a medium bowl, combine the diced chicken, mayonnaise, lemon juice, celery, dill, and chives. Season with salt and pepper to taste.

    Toast the sourdough bread slices until golden brown.

    Divide the chicken salad between two slices of bread and top with fresh spring greens.

    Place the remaining bread slices on top and cut sandwiches in half diagonally. Serve immediately.
