Strawberry Cream Cheese Stuffed French Toast

Ingredients

  • 4 slices thick brioche bread
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 cup fresh strawberries, sliced
  • 3 large eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 tbsp butter
  • maple syrup for serving

Instructions

    Mix cream cheese with powdered sugar until smooth, then fold in half of the sliced strawberries.

    Cut a pocket into each brioche slice and stuff generously with the cream cheese mixture.

    Whisk together eggs, milk, vanilla, and cinnamon in a shallow dish.

    Dip stuffed bread slices in egg mixture, coating both sides.

    Melt butter in a skillet over medium heat and cook French toast until golden brown, about 3-4 minutes per side.
