Ingredients
- 300g ground chicken
- 3 tbsp lime juice
- 2 tbsp fish sauce
- 2 tbsp toasted rice powder
- 4 shallots, thinly sliced
- 3 spring onions, chopped
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro
- 1 tsp dried chili flakes
- 8 butter lettuce leaves
Instructions

1Cook ground chicken in a pan over medium heat until fully cooked, breaking it into small pieces.

2Remove from heat and let cool slightly.

3Mix lime juice, fish sauce, and chili flakes in a bowl.

4Add the cooked chicken, shallots, spring onions, toasted rice powder, mint, and cilantro. Toss well.

5Serve the larb mixture in crisp lettuce cups.
