Ingredients
- 250g minced chicken
- 1 head butter lettuce
- 2 tbsp fish sauce
- 3 tbsp lime juice
- 1 tbsp toasted rice powder
- 3 shallots, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro
- 1 tsp chili flakes
- 1 stalk lemongrass, minced
Instructions

1Cook minced chicken in a dry pan over medium heat until cooked through, breaking it apart as it cooks.

2Remove from heat and add fish sauce, lime juice, and lemongrass. Mix well.

3Add sliced shallots, toasted rice powder, and chili flakes. Toss to combine.

4Fold in fresh mint and cilantro leaves.

5Separate lettuce leaves to form cups and spoon the larb mixture into each cup.

6Serve immediately with extra lime wedges on the side.
