Thai Larb Lettuce Wraps

Ingredients

  • 250g minced chicken
  • 1 head butter lettuce
  • 2 tbsp fish sauce
  • 3 tbsp lime juice
  • 1 tbsp toasted rice powder
  • 3 shallots, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro
  • 1 tsp chili flakes
  • 1 stalk lemongrass, minced

Instructions

    Cook minced chicken in a dry pan over medium heat until cooked through, breaking it apart as it cooks.

    Remove from heat and add fish sauce, lime juice, and lemongrass. Mix well.

    Add sliced shallots, toasted rice powder, and chili flakes. Toss to combine.

    Fold in fresh mint and cilantro leaves.

    Separate lettuce leaves to form cups and spoon the larb mixture into each cup.

    Serve immediately with extra lime wedges on the side.
