Ingredients
- 300g ground chicken
- 2 tbsp fish sauce
- 3 tbsp lime juice
- 1 tbsp toasted rice powder
- 2 shallots, thinly sliced
- 3 spring onions, chopped
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro
- 1 tsp dried chili flakes
- 8 butter lettuce leaves
- 1 tsp sugar
Instructions

1Cook ground chicken in a dry pan over medium heat until fully cooked, breaking it into small pieces.

2Remove from heat and let cool slightly for 2 minutes.

3In a bowl, mix fish sauce, lime juice, sugar, and chili flakes.

4Combine the cooked chicken with the dressing, shallots, spring onions, and toasted rice powder.

5Fold in fresh mint and cilantro leaves.
