Ingredients
- 200g flattened rice (poha)
- 1 medium onion, finely chopped
- 1 small potato, diced
- 1/2 cup green peas
- 2 green chilies, slit
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 10 curry leaves
- 2 tbsp vegetable oil
- 1 tbsp lemon juice
- 2 tbsp fresh coriander, chopped
- to taste salt
Instructions

1Rinse the poha gently in water until soft, drain well and set aside.

2Heat oil in a pan, add mustard seeds and let them splutter, then add curry leaves and green chilies.

3Add diced potatoes and cook until slightly tender, about 5 minutes.

4Add onions and peas, sauté until onions turn translucent.

5Add turmeric powder and salt, mix well.

6Add the softened poha and gently toss to combine all ingredients evenly.

7Drizzle lemon juice, garnish with fresh coriander and serve warm.
