Ingredients
- 1 kg pork belly, cut into chunks
- 6 eggs
- 2 tbsp caramelized sugar (burnt sugar syrup)
- 400 ml coconut water
- 3 cloves garlic, minced
- 1 tbsp fish sauce
- 1 tsp black pepper
- 2 tbsp vegetable oil
- 1 onion, quartered
- 2 tbsp rock sugar
Instructions

1Hard-boil the eggs for 8-10 minutes, then peel and set aside.

2Heat oil in a large pot over medium-high heat and sauté garlic until fragrant.

3Add pork chunks and brown on all sides for 5 minutes.

4Pour in the caramelized sugar and stir well to coat the meat evenly.

5Add coconut water, fish sauce, and rock sugar. Stir to combine.

6Bring to a boil, then reduce heat to low and simmer covered for 45 minutes.

7Add the peeled eggs and onion quarters, then simmer uncovered for another 20-30 minutes until pork is tender and sauce thickens.

8Season with black pepper and adjust fish sauce to taste.

9Serve hot over steamed rice.
