Vietnamese Braised Pork and Egg (Thịt Kho Tàu)

Ingredients

  • 1 kg pork belly, cut into chunks
  • 6 eggs
  • 2 tbsp caramelized sugar (burnt sugar syrup)
  • 400 ml coconut water
  • 3 cloves garlic, minced
  • 1 tbsp fish sauce
  • 1 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 onion, quartered
  • 2 tbsp rock sugar

Instructions

    Hard-boil the eggs for 8-10 minutes, then peel and set aside.

    Heat oil in a large pot over medium-high heat and sauté garlic until fragrant.

    Add pork chunks and brown on all sides for 5 minutes.

    Pour in the caramelized sugar and stir well to coat the meat evenly.

    Add coconut water, fish sauce, and rock sugar. Stir to combine.

    Bring to a boil, then reduce heat to low and simmer covered for 45 minutes.

    Add the peeled eggs and onion quarters, then simmer uncovered for another 20-30 minutes until pork is tender and sauce thickens.

    Season with black pepper and adjust fish sauce to taste.

    Serve hot over steamed rice.
