Vietnamese Spring Roll Salad

Ingredients

  • 200g fresh shrimp, cooked and halved
  • 2 cups mixed fresh herbs (mint, cilantro, dill, basil)
  • 1 cucumber, julienned
  • 2 carrots, julienned
  • 1 cup lettuce, shredded
  • 3 tbsp fish sauce
  • 2 limes, juiced
  • 1 tbsp sugar
  • 1 garlic clove, minced
  • 1 red chili, thinly sliced
  • 2 tbsp crushed roasted peanuts
  • to taste salt and pepper

Instructions

    Prepare the dressing by mixing fish sauce, lime juice, sugar, minced garlic, and sliced chili in a bowl until sugar dissolves.

    Arrange lettuce and mixed herbs on a plate as the base.

    Layer julienned cucumber and carrots over the herbs and lettuce.

    Top with halved cooked shrimp.

    Drizzle the lime-fish sauce dressing generously over the salad.

    Sprinkle crushed roasted peanuts on top and season with salt and pepper to taste.
