Ingredients
- 200g fresh shrimp, cooked and halved
- 2 cups mixed fresh herbs (mint, cilantro, dill, basil)
- 1 cucumber, julienned
- 2 carrots, julienned
- 1 cup lettuce, shredded
- 3 tbsp fish sauce
- 2 limes, juiced
- 1 tbsp sugar
- 1 garlic clove, minced
- 1 red chili, thinly sliced
- 2 tbsp crushed roasted peanuts
- to taste salt and pepper
Instructions

1Prepare the dressing by mixing fish sauce, lime juice, sugar, minced garlic, and sliced chili in a bowl until sugar dissolves.

2Arrange lettuce and mixed herbs on a plate as the base.

3Layer julienned cucumber and carrots over the herbs and lettuce.

4Top with halved cooked shrimp.

5Drizzle the lime-fish sauce dressing generously over the salad.

6Sprinkle crushed roasted peanuts on top and season with salt and pepper to taste.
