Ingredients

  • 400g day-old bread, cubed
  • 500g fresh tomatoes, diced
  • 1 cucumber diced
  • 1 red onion thinly sliced
  • 200g fresh basil leaves
  • 100ml extra virgin olive oil
  • 3 tbsp red wine vinegar
  • to taste salt and pepper

Instructions

    Toast the bread cubes in a dry pan until lightly golden, about 5 minutes.

    In a large bowl, combine tomatoes, cucumber, red onion, and basil.

    Add the toasted bread cubes to the vegetable mixture.

    Whisk together olive oil and red wine vinegar in a small bowl.

    Pour the dressing over the salad and toss gently.

    Season with salt and pepper to taste.

    Let the salad rest for 10 minutes before serving to allow flavors to meld.
