Ingredients
- 400g day-old bread, cubed
- 500g fresh tomatoes, diced
- 1 cucumber diced
- 1 red onion thinly sliced
- 200g fresh basil leaves
- 100ml extra virgin olive oil
- 3 tbsp red wine vinegar
- to taste salt and pepper
Instructions

1Toast the bread cubes in a dry pan until lightly golden, about 5 minutes.

2In a large bowl, combine tomatoes, cucumber, red onion, and basil.

3Add the toasted bread cubes to the vegetable mixture.

4Whisk together olive oil and red wine vinegar in a small bowl.
