Vietnamese Spring Roll Salad

Ingredients

  • 200g cooked shrimp or chicken, sliced
  • 2 cups mixed fresh lettuce
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 3 tbsp lime juice
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 garlic clove, minced
  • 2 rice paper sheets
  • 1 tbsp vegetable oil

Instructions

    Cut rice paper into thin strips and fry in oil until crispy, set aside

    In a bowl, whisk together lime juice, fish sauce, sugar, and minced garlic to make dressing

    Arrange lettuce, mint, cilantro, carrot, and cucumber in a large salad bowl

    Add sliced cooked protein on top
  5. 5
    Pour dressing over the salad and toss gently

    Top with crispy rice paper strips and serve immediately
