Ingredients
- 200g cooked shrimp or chicken, sliced
- 2 cups mixed fresh lettuce
- 1 cup fresh mint leaves
- 1 cup fresh cilantro
- 1 carrot, julienned
- 1 cucumber, julienned
- 3 tbsp lime juice
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1 garlic clove, minced
- 2 rice paper sheets
- 1 tbsp vegetable oil
Instructions

1Cut rice paper into thin strips and fry in oil until crispy, set aside

2In a bowl, whisk together lime juice, fish sauce, sugar, and minced garlic to make dressing

3Arrange lettuce, mint, cilantro, carrot, and cucumber in a large salad bowl

4Add sliced cooked protein on top

5Pour dressing over the salad and toss gently

6Top with crispy rice paper strips and serve immediately
