Cucumber and Yogurt Salad (Kheera Raita)

Ingredients

  • 2 cups plain yogurt
  • 2 medium cucumbers, grated
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon red chili powder
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon mint leaves, chopped
  • salt to taste
  • 1 tablespoon olive oil

Instructions

    Whisk yogurt in a bowl until smooth and creamy.

    Squeeze excess moisture from grated cucumber using a clean cloth.

    Add grated cucumber to the yogurt and mix well.

    Heat olive oil in a small pan and toast cumin seeds until fragrant (about 1 minute).

    Pour the warm oil with cumin seeds into the yogurt mixture.

    Stir in red chili powder, cilantro, and mint leaves.

    Season with salt to taste and mix thoroughly.
