Beef and Guinness Stew

Ingredients

  • 800g beef chuck, cut into chunks
  • 2 onions, quartered
  • 3 carrots, cut into chunks
  • 3 potatoes, cubed
  • 200g mushrooms, halved
  • 440ml Guinness stout
  • 400ml beef stock
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 2 tbsp plain flour
  • salt and pepper to taste

Instructions

    Heat oil in a large heavy-bottomed pot over medium-high heat.

    Season beef with salt and pepper, then dust with flour.

    Brown the beef in batches, about 3-4 minutes per side. Set aside.

    In the same pot, sauté onions until softened, about 5 minutes.

    Add tomato paste and cook for 1 minute, stirring constantly.

    Pour in Guinness and beef stock, scraping up any browned bits from the bottom.

    Return beef to the pot and add bay leaves and thyme.

    Bring to a simmer, then reduce heat to low. Cover and cook for 1 hour 30 minutes.

    Add carrots, potatoes, and mushrooms.

    Continue cooking, covered, for another 45 minutes until vegetables are tender and beef is very soft.

    Season to taste with salt and pepper before serving.
