Ingredients
- 800g beef chuck, cut into chunks
- 2 onions, quartered
- 3 carrots, cut into chunks
- 3 potatoes, cubed
- 200g mushrooms, halved
- 440ml Guinness stout
- 400ml beef stock
- 2 bay leaves
- 2 sprigs fresh thyme
- 2 tbsp tomato paste
- 2 tbsp vegetable oil
- 2 tbsp plain flour
- salt and pepper to taste
Instructions

1Heat oil in a large heavy-bottomed pot over medium-high heat.

2Season beef with salt and pepper, then dust with flour.

3Brown the beef in batches, about 3-4 minutes per side. Set aside.

4In the same pot, sauté onions until softened, about 5 minutes.

5Add tomato paste and cook for 1 minute, stirring constantly.

6Pour in Guinness and beef stock, scraping up any browned bits from the bottom.

7Return beef to the pot and add bay leaves and thyme.

8Bring to a simmer, then reduce heat to low. Cover and cook for 1 hour 30 minutes.

9Add carrots, potatoes, and mushrooms.

10Continue cooking, covered, for another 45 minutes until vegetables are tender and beef is very soft.

11Season to taste with salt and pepper before serving.
