Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 2 cups milk
  • 4 tablespoons melted butter
  • 1.5 cups fresh blueberries
  • to taste maple syrup
  • as needed butter for griddle

Instructions

    In a large bowl, whisk together flour, sugar, baking powder, and salt.

    In another bowl, beat eggs and combine with milk and melted butter.

    Pour wet ingredients into dry ingredients and stir until just combined; batter should be slightly lumpy.

    Gently fold in blueberries, reserving a few for topping.

    Heat a griddle or non-stick pan over medium-high heat and lightly butter it.

    Pour 1/4 cup batter onto the griddle for each pancake.

    Cook until bubbles form on the surface and edges look set, about 2-3 minutes, then flip.

    Cook the other side until golden brown, about 1-2 minutes.

    Transfer to a plate and serve warm with maple syrup and butter.
