Classic American Pot Roast

Ingredients

  • 3 lb beef chuck roast
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 4 medium potatoes, cubed
  • 3 medium carrots, chunked
  • 2 celery stalks, chopped
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

    Preheat oven to 325°F (165°C).

    Pat beef roast dry with paper towels and season generously with salt and pepper.

    Heat vegetable oil in a large Dutch oven over medium-high heat.

    Brown the beef roast on all sides for 8-10 minutes, then remove and set aside.

    In the same pot, sauté onion and celery for 5 minutes until softened.

    Add minced garlic and cook for 1 minute until fragrant.

    Deglaze the pot with red wine, scraping up browned bits.

    Return beef roast to the pot and add beef broth, bay leaves, thyme, and rosemary.

    Cover and transfer to oven for 1.5 hours.

    Add potatoes and carrots to the pot, cover, and continue cooking for 45 minutes until vegetables are tender.

    Remove bay leaves and serve hot with the braising liquid ladled over each portion.
