Ingredients
- 3 lb beef chuck roast
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 4 medium potatoes, cubed
- 3 medium carrots, chunked
- 2 celery stalks, chopped
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
Instructions

1Preheat oven to 325°F (165°C).

2Pat beef roast dry with paper towels and season generously with salt and pepper.

3Heat vegetable oil in a large Dutch oven over medium-high heat.

4Brown the beef roast on all sides for 8-10 minutes, then remove and set aside.

5In the same pot, sauté onion and celery for 5 minutes until softened.

6Add minced garlic and cook for 1 minute until fragrant.

7Deglaze the pot with red wine, scraping up browned bits.

8Return beef roast to the pot and add beef broth, bay leaves, thyme, and rosemary.

9Cover and transfer to oven for 1.5 hours.

10Add potatoes and carrots to the pot, cover, and continue cooking for 45 minutes until vegetables are tender.

11Remove bay leaves and serve hot with the braising liquid ladled over each portion.
