Ingredients
- 1.5 kg rooster or beef, cut into chunks
- 3 tablespoons olive oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 400 ml red wine
- 800 ml tomato sauce
- 2 bay leaves
- 1 cinnamon stick
- 3 cloves
- salt and pepper to taste
- 400 g fresh pasta
- 50 g grated Kefalotiri cheese
Instructions

1Heat olive oil in a large heavy pot over medium-high heat. Brown the meat in batches, about 3-4 minutes per side, then set aside.

2In the same pot, sauté the chopped onion until softened, about 5 minutes. Add minced garlic and cook for another minute.

3Pour in the red wine and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 minutes.

4Return the meat to the pot and add the tomato sauce, bay leaves, cinnamon stick, and cloves. Stir well.

5Reduce heat to low, cover, and simmer for about 90 minutes until the meat is very tender, stirring occasionally. Season with salt and pepper.

6In the last 15 minutes of cooking, bring a large pot of salted water to boil and cook the pasta until al dente. Drain and set aside.

7Divide the cooked pasta among serving bowls and top with the meat sauce. Sprinkle with grated cheese and serve hot.
