Pastitsada

🟡 Medium

Ingredients

  • 1.5 kg rooster or beef, cut into chunks
  • 3 tablespoons olive oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 400 ml red wine
  • 800 ml tomato sauce
  • 2 bay leaves
  • 1 cinnamon stick
  • 3 cloves
  • salt and pepper to taste
  • 400 g fresh pasta
  • 50 g grated Kefalotiri cheese

Instructions

  1. 1
Heat olive oil in a large heavy pot over medium-high heat. Brown the meat in batches, about 3-4 minutes per side, then set aside.
  2. 2
In the same pot, sauté the chopped onion until softened, about 5 minutes. Add minced garlic and cook for another minute.
  3. 3
Pour in the red wine and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 minutes.
  4. 4
Return the meat to the pot and add the tomato sauce, bay leaves, cinnamon stick, and cloves. Stir well.
  5. 5
Reduce heat to low, cover, and simmer for about 90 minutes until the meat is very tender, stirring occasionally. Season with salt and pepper.
  6. 6
In the last 15 minutes of cooking, bring a large pot of salted water to boil and cook the pasta until al dente. Drain and set aside.
  7. 7
Divide the cooked pasta among serving bowls and top with the meat sauce. Sprinkle with grated cheese and serve hot.
