Lamb and Lentil Stew

Ingredients

  • 800 g lamb shoulder, cubed
  • 250 g brown lentils
  • 2 large onions, diced
  • 4 garlic cloves, minced
  • 2 carrots, chopped
  • 1 tbsp cumin
  • 1 tbsp coriander
  • 1 tsp cinnamon
  • 1 liter beef broth
  • 3 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

    Heat olive oil in a large pot over medium-high heat.

    Brown the lamb cubes on all sides, approximately 8 minutes total. Remove and set aside.

    In the same pot, sauté onions and carrots until softened, about 5 minutes.

    Add garlic and cook for 1 minute until fragrant.

    Stir in cumin, coriander, and cinnamon. Toast spices for 30 seconds.

    Return lamb to the pot and add lentils and beef broth.

    Bring to a boil, then reduce heat to low and simmer covered for 75 minutes.

    Season with salt and pepper to taste.

    Serve hot over steamed rice or with flatbread.
