Ingredients
- 200 g chicken breast, diced
- 1 cup jasmine rice
- 6 cups chicken broth
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons fish sauce
- 1 teaspoon white pepper
- 3 tablespoons fried shallots
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon vegetable oil
Instructions

1Rinse the jasmine rice under cold water until the water runs clear.

2Heat oil in a large pot over medium heat and sauté garlic and ginger until fragrant.

3Add diced chicken and cook until no longer pink on the outside.

4Add the rinsed rice and stir well to coat with the oil and aromatics.

5Pour in chicken broth and bring to a boil, then reduce heat to low.

6Simmer for 20-25 minutes, stirring occasionally, until rice breaks down and the mixture becomes creamy.

7Season with fish sauce and white pepper to taste.

8Serve hot in bowls and garnish generously with fried shallots and fresh cilantro.
