Bánh Cuốn – Vietnamese Steamed Rice Rolls

Ingredients

  • 1 cup rice flour
  • 1.5 cups water
  • 1/2 teaspoon salt
  • 200g ground pork
  • 150g wood ear mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 teaspoon sugar
  • 3 tablespoons fried shallots
  • 2 springs fresh cilantro

Instructions

    Mix rice flour with water and salt to create a thin batter, let rest 15 minutes.

    In a pan, sauté garlic, then add ground pork and mushrooms. Season with fish sauce and sugar. Cook until pork is done, about 8 minutes. Cool slightly.

    Heat a non-stick skillet over medium heat. Pour a thin layer of batter, swirl to coat evenly. Cook for 1-2 minutes until set but still soft.

    Add a spoonful of filling down the center and roll tightly. Transfer to a plate and keep warm.

    Repeat with remaining batter and filling.

    Serve warm topped with fried shallots and cilantro, with fish sauce dipping sauce on the side.
