Ingredients
- 1 cup rice flour
- 1.5 cups water
- 1/2 teaspoon salt
- 200g ground pork
- 150g wood ear mushrooms, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons fish sauce
- 1 teaspoon sugar
- 3 tablespoons fried shallots
- 2 springs fresh cilantro
Instructions

1Mix rice flour with water and salt to create a thin batter, let rest 15 minutes.

2In a pan, sauté garlic, then add ground pork and mushrooms. Season with fish sauce and sugar. Cook until pork is done, about 8 minutes. Cool slightly.

3Heat a non-stick skillet over medium heat. Pour a thin layer of batter, swirl to coat evenly. Cook for 1-2 minutes until set but still soft.

4Add a spoonful of filling down the center and roll tightly. Transfer to a plate and keep warm.

5Repeat with remaining batter and filling.

6Serve warm topped with fried shallots and cilantro, with fish sauce dipping sauce on the side.
