- 4 slices brioche bread
- 2 eggs
- 100 ml whole milk
- 1 tsp vanilla extract
- 200g mixed fresh berries (strawberries, blueberries, raspberries)
- 2 tbsp sugar
- 2 tbsp butter
- pinch salt
- 2 tbsp powdered sugar for dusting

1In a shallow bowl, whisk together eggs, milk, vanilla extract, and a pinch of salt until well combined.

2In a small saucepan, combine fresh berries with sugar over medium heat, stirring gently until the berries release their juices and form a light compote, about 8-10 minutes. Set aside.

3Heat butter in a large skillet over medium heat until foaming.

4Dip each brioche slice into the egg mixture for 2-3 seconds on each side, ensuring they are coated but not oversaturated.

5Place the dipped brioche slices into the hot skillet and cook for 2-3 minutes per side until golden brown and crispy on the outside.

6Transfer to serving plates, top with warm berry compote, and dust generously with powdered sugar before serving immediately.
