French Brioche French Toast with Berry Compote

🟡 Medium

Ingredients

  • 4 slices brioche bread
  • 2 eggs
  • 100 ml whole milk
  • 1 tsp vanilla extract
  • 200g mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 tbsp sugar
  • 2 tbsp butter
  • pinch salt
  • 2 tbsp powdered sugar for dusting

Instructions

  1. 1
In a shallow bowl, whisk together eggs, milk, vanilla extract, and a pinch of salt until well combined.
  2. 2
In a small saucepan, combine fresh berries with sugar over medium heat, stirring gently until the berries release their juices and form a light compote, about 8-10 minutes. Set aside.
  3. 3
Heat butter in a large skillet over medium heat until foaming.
  4. 4
Dip each brioche slice into the egg mixture for 2-3 seconds on each side, ensuring they are coated but not oversaturated.
  5. 5
Place the dipped brioche slices into the hot skillet and cook for 2-3 minutes per side until golden brown and crispy on the outside.
  6. 6
Transfer to serving plates, top with warm berry compote, and dust generously with powdered sugar before serving immediately.
