Ingredients

  • 1.5 kg beef chuck roast
  • 500 ml red wine vinegar
  • 300 ml beef broth
  • 2 onions, sliced
  • 4 garlic cloves, minced
  • 6 juniper berries
  • 4 bay leaves
  • 6 whole cloves
  • 2 tablespoons brown sugar
  • 2 tablespoons tomato paste
  • 3 tablespoons vegetable oil
  • salt and pepper to taste

Instructions

    Combine vinegar, 1 cup water, onions, garlic, juniper berries, bay leaves, and cloves in a large bowl to create the marinade.

    Place the beef roast in the marinade, cover, and refrigerate for 3-5 days, turning occasionally.

    Remove meat from marinade, pat dry, and reserve the marinade. Season meat with salt and pepper.

    Heat oil in a large Dutch oven over medium-high heat and brown the roast on all sides, about 10 minutes total.

    Strain the marinade, reserving the liquid and discarding solids. Pour the marinade liquid and beef broth into the pot.

    Stir in brown sugar and tomato paste, then cover and simmer for 2.5-3 hours until meat is tender, turning halfway through.

    Remove roast and slice. Strain sauce and serve over sliced meat with red cabbage and potato dumplings.
