Ingredients
- 1.5 kg beef chuck roast
- 500 ml red wine vinegar
- 300 ml beef broth
- 2 onions, sliced
- 4 garlic cloves, minced
- 6 juniper berries
- 4 bay leaves
- 6 whole cloves
- 2 tablespoons brown sugar
- 2 tablespoons tomato paste
- 3 tablespoons vegetable oil
- salt and pepper to taste
Instructions
-
1Combine vinegar, 1 cup water, onions, garlic, juniper berries, bay leaves, and cloves in a large bowl to create the marinade.

2Place the beef roast in the marinade, cover, and refrigerate for 3-5 days, turning occasionally.
-
3Remove meat from marinade, pat dry, and reserve the marinade. Season meat with salt and pepper.
-
4Heat oil in a large Dutch oven over medium-high heat and brown the roast on all sides, about 10 minutes total.

-
7Remove roast and slice. Strain sauce and serve over sliced meat with red cabbage and potato dumplings.
