Ingredients
- 900g beef chuck, cubed
- 2 medium onions, sliced
- 3 carrots, chunked
- 2 parsnips, chunked
- 200g button mushrooms, halved
- 12 pearl onions, peeled
- 500ml brown ale
- 300ml beef stock
- 2 bay leaves
- 3 sprigs fresh thyme
- 2 tbsp tomato paste
- 2 tbsp plain flour
- 2 tbsp vegetable oil
- to taste salt and black pepper
Instructions
-
1Preheat oven to 160°C (320°F). Season beef with salt and pepper, then toss with flour.
-
2Heat oil in a large casserole dish over medium-high heat. Brown the beef in batches, about 3-4 minutes per side. Remove and set aside.
-
3In the same casserole, sauté sliced onions until softened, about 5 minutes. Add tomato paste and cook for 1 minute.
-
4Pour in the brown ale, scraping up any browned bits from the bottom. Add beef stock, bay leaves, and thyme.
-
5Return beef to the casserole. Bring to a simmer, cover, and transfer to the oven for 1 hour 30 minutes.
-
6Add carrots, parsnips, pearl onions, and mushrooms. Return to oven for another 45 minutes until beef is tender and vegetables are cooked.
-
7Remove bay leaves and thyme sprigs. Season to taste with salt and pepper before serving.
