Beef and Ale Stew

🟡 Medium

Ingredients

  • 900g beef chuck, cubed
  • 2 medium onions, sliced
  • 3 carrots, chunked
  • 2 parsnips, chunked
  • 200g button mushrooms, halved
  • 12 pearl onions, peeled
  • 500ml brown ale
  • 300ml beef stock
  • 2 bay leaves
  • 3 sprigs fresh thyme
  • 2 tbsp tomato paste
  • 2 tbsp plain flour
  • 2 tbsp vegetable oil
  • to taste salt and black pepper

Instructions

  1. 1
Preheat oven to 160°C (320°F). Season beef with salt and pepper, then toss with flour.
  2. 2
Heat oil in a large casserole dish over medium-high heat. Brown the beef in batches, about 3-4 minutes per side. Remove and set aside.
  3. 3
In the same casserole, sauté sliced onions until softened, about 5 minutes. Add tomato paste and cook for 1 minute.
  4. 4
Pour in the brown ale, scraping up any browned bits from the bottom. Add beef stock, bay leaves, and thyme.
  5. 5
Return beef to the casserole. Bring to a simmer, cover, and transfer to the oven for 1 hour 30 minutes.
  6. 6
Add carrots, parsnips, pearl onions, and mushrooms. Return to oven for another 45 minutes until beef is tender and vegetables are cooked.
  7. 7
Remove bay leaves and thyme sprigs. Season to taste with salt and pepper before serving.
