Lamb and Lentil Stew (Mudardara)

Lamb and Lentil Stew (Mudardara)

🟡 Medium

Ingredients

  • 600g lamb shoulder, cubed
  • 1 cup brown lentils
  • 3/4 cup bulgur wheat
  • 4 large onions, sliced
  • 6 cups lamb or vegetable stock
  • 2 tbsp olive oil
  • 1 tsp allspice
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • 2 cloves garlic, minced

Instructions

  1. 1
Heat olive oil in a large pot over medium-high heat and brown the lamb cubes on all sides, approximately 5-7 minutes. Remove and set aside.
  2. 2
In the same pot, add half the sliced onions and cook until golden, about 3 minutes. Return lamb to pot.
  3. 3
Add minced garlic, allspice, and cinnamon, stirring constantly for 1 minute until fragrant.
  4. 4
Pour in the stock and bring to a boil. Reduce heat and simmer covered for 30 minutes.
  5. 5
Rinse lentils and add to the pot. Continue simmering for 20 minutes until lentils begin to soften.
  6. 6
Stir in bulgur wheat and cook for another 15-20 minutes until bulgur is tender and liquid is mostly absorbed.
  7. 7
While the stew cooks, caramelize remaining onions in a separate pan over medium-low heat for 20-25 minutes, stirring occasionally, until deep golden brown.
  8. 8
Season stew with salt and pepper to taste. Top with caramelized onions before serving.
