Medium
Ingredients
- 600g lamb shoulder, cubed
- 1 cup brown lentils
- 3/4 cup bulgur wheat
- 4 large onions, sliced
- 6 cups lamb or vegetable stock
- 2 tbsp olive oil
- 1 tsp allspice
- 1/2 tsp cinnamon
- Salt and pepper to taste
- 2 cloves garlic, minced
Instructions
-
1Heat olive oil in a large pot over medium-high heat and brown the lamb cubes on all sides, approximately 5-7 minutes. Remove and set aside.
-
2In the same pot, add half the sliced onions and cook until golden, about 3 minutes. Return lamb to pot.
-
3Add minced garlic, allspice, and cinnamon, stirring constantly for 1 minute until fragrant.
-
4Pour in the stock and bring to a boil. Reduce heat and simmer covered for 30 minutes.
-
5Rinse lentils and add to the pot. Continue simmering for 20 minutes until lentils begin to soften.
-
6Stir in bulgur wheat and cook for another 15-20 minutes until bulgur is tender and liquid is mostly absorbed.
-
7While the stew cooks, caramelize remaining onions in a separate pan over medium-low heat for 20-25 minutes, stirring occasionally, until deep golden brown.
-
8Season stew with salt and pepper to taste. Top with caramelized onions before serving.
