Bánh Cuốn – Vietnamese Steamed Rice Rolls

Ingredients

  • 1 cup rice flour
  • 1.5 cups water
  • 200 g ground pork
  • 50 g wood ear mushrooms, finely chopped
  • 3 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp fish sauce
  • 1 tsp sugar
  • oil for frying
  • fresh herbs (mint, cilantro, dill)

Instructions

    Mix rice flour with water to create a smooth batter and let rest for 10 minutes.

    Heat oil in a pan and fry sliced shallots until golden and crispy; set aside.

    In another pan, cook ground pork with garlic, add mushrooms, fish sauce, and sugar until cooked through.

    Heat a non-stick pan or bánh cuốn mold and lightly grease it.

    Pour a thin layer of batter onto the hot pan, spread evenly, and steam for 30-40 seconds until translucent.

    Add a spoonful of pork filling along one edge, roll tightly, and transfer to serving plate.

    Repeat until all batter is used.

    Top rolls with crispy fried shallots and serve with fresh herbs and sweet-sour dipping sauce.
