Beef and Ale Pie

Ingredients

  • 800g beef chuck, cubed
  • 2 medium onions, diced
  • 3 carrots, chunked
  • 2 celery stalks, chopped
  • 500ml brown ale
  • 300ml beef stock
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 2 bay leaves
  • 1 tsp dried thyme
  • 500g puff pastry
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

    Preheat oven to 160°C (320°F). Season beef with salt and pepper, then dust with flour.

    Heat olive oil in a large casserole dish over medium-high heat. Brown the beef in batches and set aside.

    In the same dish, sauté onions, carrots, and celery until softened, about 5 minutes.

    Stir in tomato paste and cook for 1 minute, then add the brown ale and beef stock.

    Return beef to the dish, add bay leaves and thyme. Bring to a simmer, cover, and cook in the oven for 90 minutes until beef is tender.

    Remove from oven, discard bay leaves, and let cool slightly. Transfer mixture to a pie dish.

    Increase oven temperature to 200°C (400°F). Cover the filling with puff pastry, seal edges, and brush with egg wash.

    Bake for 25-30 minutes until pastry is golden brown and crispy.
