Beef and Ale Stew

Ingredients

  • 900g beef chuck, cubed
  • 2 onions, quartered
  • 4 carrots, chunked
  • 3 potatoes, diced
  • 500ml brown ale
  • 300ml beef stock
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 3 fresh thyme sprigs
  • 2 tbsp plain flour
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

    Season the beef cubes with salt and pepper, then toss in flour to coat lightly.

    Heat oil in a large heavy-bottomed pot and brown the beef in batches until golden on all sides. Set aside.

    In the same pot, sauté the onions until softened, approximately 5 minutes.

    Add tomato paste and stir well to combine with the onions.

    Return the beef to the pot and pour in the brown ale and beef stock.

    Add bay leaves and thyme, bring to a simmer.

    Cover and transfer to a preheated 160°C oven for 1.5 hours.

    Add the carrots and potatoes, stir well, and return to the oven for another 45 minutes until vegetables are tender.

    Remove bay leaves and thyme sprigs before serving.

    Taste and adjust seasoning as needed.
