Ingredients
- 2 cups cooked rice
- 1 cup fresh spinach
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 100g shiitake mushrooms, sliced
- 2 eggs
- 4 tbsp gochujang (Korean red chili paste)
- 2 tbsp sesame oil
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tsp sesame seeds
Instructions

1Bring a pot of water to boil and blanch spinach for 2 minutes, then drain and squeeze dry. Season with 1 tsp sesame oil, 1 clove minced garlic, and a pinch of salt.

2Sauté mushrooms in a pan with 1 tbsp sesame oil and 1 clove minced garlic until golden. Season lightly with salt.

3In a small bowl, mix gochujang with 1 tbsp sesame oil and 1 tbsp water to create the sauce.

4Divide warm rice between two bowls. Arrange spinach, carrots, cucumber, and mushrooms on top of the rice in separate sections.

5Fry the eggs sunny-side up in a pan with a little oil.

6Place one fried egg on top of each bowl and drizzle with gochujang sauce.

7Sprinkle sesame seeds over the top. Mix everything together before eating.

8Serve immediately while rice is still warm.
