Ingredients

  • 2 cups all-purpose flour
  • 3.5 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons white sugar
  • 2 eggs
  • 2 cups milk
  • 4 tablespoons melted butter
  • 1.5 cups fresh blueberries
  • 1 teaspoon vanilla extract

Instructions

    In a large mixing bowl, whisk together flour, baking powder, salt, and sugar.

    In another bowl, beat eggs, then add milk, melted butter, and vanilla extract.

    Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix; lumps are fine.

    Gently fold in fresh blueberries.

    Heat a griddle or non-stick skillet over medium-high heat and lightly butter it.

    Pour 1/4 cup batter per pancake onto the griddle and cook until bubbles form on top, about 2-3 minutes.

    Flip and cook the other side until golden brown, about 1-2 minutes.

    Serve immediately with maple syrup, butter, and extra blueberries on top.
