- 2 eggs
- 2 cups milk
- 4 tablespoons melted butter
- 1.5 cups fresh blueberries

Instructions

2In another bowl, beat eggs, then add milk, melted butter, and vanilla extract.

3Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix; lumps are fine.

4Gently fold in fresh blueberries.

5Heat a griddle or non-stick skillet over medium-high heat and lightly butter it.

6Pour 1/4 cup batter per pancake onto the griddle and cook until bubbles form on top, about 2-3 minutes.

7Flip and cook the other side until golden brown, about 1-2 minutes.

8Serve immediately with maple syrup, butter, and extra blueberries on top.
