Ingredients
- 400g fresh cactus paddles (nopales), cleaned and diced
- 2 medium tomatoes, diced
- 1/2 white onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 jalapeños, minced
- 3 limes, juiced
- 3 tbsp olive oil
- to taste sea salt and black pepper
- 1/4 cup crumbly cheese (queso fresco), optional
Instructions

1Clean the cactus paddles by removing spines and dicing into 1-inch pieces.

2Boil the diced nopales in salted water for 8-10 minutes until tender, then drain and let cool slightly.

3In a large bowl, combine cooled nopales, diced tomatoes, chopped onion, cilantro, and jalapeños.

4Whisk together lime juice and olive oil, then pour over the salad.

5Season with sea salt and black pepper to taste.

6Toss gently and let sit for 5 minutes to allow flavors to meld.

7Serve at room temperature, topped with crumbly queso fresco if desired.
