Caprese BLT Sandwich

Ingredients

  • 4 slices bacon
  • 4 slices bread (sourdough or ciabatta)
  • 2 cups fresh lettuce
  • 2 medium ripe tomatoes
  • 4 oz fresh mozzarella
  • 8 leaves fresh basil
  • 2 tbsp mayonnaise
  • 1 tbsp balsamic vinegar
  • to taste salt and pepper

Instructions

    Cook bacon in a skillet over medium-high heat until crispy, about 8 minutes. Drain on paper towels and break into pieces.

    Toast bread slices until golden brown, about 2 minutes per side.

    Spread mayonnaise on each toasted bread slice.

    Layer lettuce, tomato slices, mozzarella, and basil on two bread slices.

    Add bacon pieces on top of basil.

    Drizzle with balsamic vinegar and season with salt and pepper.

    Top with remaining bread slices and cut diagonally if desired.
