Ingredients

  • 2 boneless chicken breasts
  • 2 cups fresh tomatoes, sliced
  • 8 oz fresh mozzarella
  • 8 leaves fresh basil
  • 4 slices crusty ciabatta bread
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • to taste salt and pepper

Instructions

    Season chicken breasts with salt, pepper, and 1 tbsp olive oil.

    Grill or pan-sear chicken for 6-7 minutes per side until cooked through. Let rest for 5 minutes, then slice.

    Toast ciabatta bread lightly until golden.

    Layer mozzarella, tomato slices, and basil on bread.

    Top with sliced chicken.

    Drizzle with remaining olive oil and balsamic vinegar.
