Ingredients
- 2 boneless chicken breasts
- 2 cups fresh tomatoes, sliced
- 8 oz fresh mozzarella
- 8 leaves fresh basil
- 4 slices crusty ciabatta bread
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- to taste salt and pepper
Instructions

1Season chicken breasts with salt, pepper, and 1 tbsp olive oil.

2Grill or pan-sear chicken for 6-7 minutes per side until cooked through. Let rest for 5 minutes, then slice.

3Toast ciabatta bread lightly until golden.

4Layer mozzarella, tomato slices, and basil on bread.

5Top with sliced chicken.

6Drizzle with remaining olive oil and balsamic vinegar.
