Ingredients
- 1.5 kg beef chuck, cut into chunks
- 3 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 red bell peppers, sliced
- 400 g canned tomatoes
- 3 medium potatoes, cubed
- 250 ml beef broth
- 1 teaspoon paprika
- 1 bay leaf
- Salt and pepper to taste
Instructions

1Heat olive oil in a large heavy-bottomed pot over medium-high heat.

2Season beef chunks with salt and pepper, then brown them in batches on all sides. Remove and set aside.

3In the same pot, sauté diced onion until softened, about 5 minutes.

4Add minced garlic and cook for 1 minute until fragrant.

5Stir in paprika and cook for 30 seconds.

6Add sliced bell peppers and cook for 3 minutes.

7Return beef to the pot and add canned tomatoes, beef broth, and bay leaf.

8Bring to a simmer, then reduce heat to low. Cover and cook for 1 hour.

9Add cubed potatoes and continue cooking for 45 minutes to 1 hour until beef is tender and potatoes are cooked through.

10Adjust seasoning with salt and pepper. Serve hot.
