Ingredients
- 200g chicken breast
- 1 cup jasmine rice
- 6 cups chicken broth
- 3 shallots, sliced
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 teaspoon salt
- handful fresh cilantro
- handful fresh scallions
- 2 tablespoons vegetable oil
Instructions

1Rinse jasmine rice under cold water until water runs clear

2Heat oil in a pot and fry sliced shallots until golden and crispy, set aside

3In the same pot, sauté minced garlic for 30 seconds until fragrant

4Add chicken breast and broth, bring to boil, then simmer for 15 minutes until chicken is cooked

5Remove chicken, shred it finely, and return to pot

6Add rice and stir well, reduce heat to low and simmer for 25-30 minutes, stirring occasionally, until rice breaks down and mixture becomes creamy

7Season with fish sauce and salt to taste

8Serve in bowls topped with crispy fried shallots, fresh cilantro, and scallions
