Ingredients

  • 12 corn tortillas, cut into strips and fried
  • 1 kg fresh tomatillos, husked
  • 2 jalapeño peppers
  • 1/4 white onion
  • 1 clove garlic
  • 1/2 cup fresh cilantro
  • 4 eggs
  • 1/2 cup Mexican crema or sour cream
  • 1 cup crumbly queso fresco
  • 2 tablespoons vegetable oil
  • to taste salt and pepper

Instructions

    Boil tomatillos and jalapeños in salted water for 5-7 minutes until softened.

    Blend cooked tomatillos, jalapeños, garlic, onion, and cilantro until smooth. Season with salt and pepper.

    Heat oil in a large skillet over medium heat. Add fried tortilla strips and cook for 1 minute.

    Pour green salsa over tortilla strips and toss gently for 2-3 minutes until heated through and slightly softened.

    Transfer to serving plates and top with crema, queso fresco, and a fried egg. Serve immediately.
