Ingredients
- 12 corn tortillas, cut into strips and fried
- 1 kg fresh tomatillos, husked
- 2 jalapeño peppers
- 1/4 white onion
- 1 clove garlic
- 1/2 cup fresh cilantro
- 4 eggs
- 1/2 cup Mexican crema or sour cream
- 1 cup crumbly queso fresco
- 2 tablespoons vegetable oil
- to taste salt and pepper
Instructions

1Boil tomatillos and jalapeños in salted water for 5-7 minutes until softened.

2Blend cooked tomatillos, jalapeños, garlic, onion, and cilantro until smooth. Season with salt and pepper.

3Heat oil in a large skillet over medium heat. Add fried tortilla strips and cook for 1 minute.

4Pour green salsa over tortilla strips and toss gently for 2-3 minutes until heated through and slightly softened.

5Transfer to serving plates and top with crema, queso fresco, and a fried egg. Serve immediately.
