Ingredients
- 8 corn tortillas, cut into strips
- 1 cup salsa roja (red salsa)
- 4 eggs
- 1/2 cup crumbly cheese (queso fresco)
- 1/4 cup sour cream
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 2 tablespoons fresh cilantro, chopped
Instructions

1Heat 2 tablespoons of oil in a large skillet over medium heat.

2Add tortilla strips and fry until crispy, about 3-4 minutes, stirring frequently.

3Pour salsa over the crispy tortilla strips and stir well, coating evenly. Simmer for 3-4 minutes until the tortillas soften slightly but retain some crispness.

4Push the chilaquiles to the sides of the skillet and crack eggs into the center. Fry until cooked to your preference.

5Top with crumbly cheese, sour cream, and fresh cilantro.
